“Queen of Spring” from Sicily Arrives in Bangkok Through Refined White Asparagus Creations at Don Giovanni

The highlight of this season is the prized “white asparagus”, often referred to as the “Queen of Spring Vegetables” for its delicate texture, subtle aroma, and naturally sweet flavour. Celebrating the elegance of Italian culinary artistry, the chef has transformed this rare ingredient into a series of contemporary creations inspired by authentic Mediterranean cuisine.

Guests may begin with the White Asparagus Soup with Saffron Foam and Grilled Tiger Prawns, where the velvety richness of white asparagus is elevated by the distinctive fragrance of saffron and complemented by the natural sweetness of perfectly grilled tiger prawns. Another signature creation, Braised White Asparagus with Bolzano Sauce and Caviar, reflects the refined simplicity of Southern Italian cuisine, delicately highlighting the ingredient’s true flavours while adding a luxurious touch through the silky finish of premium caviar.

Additional seasonal highlights include Lobster Arancini Salad with Rocket Leaves and Spicy Tomato Cream Sauce, Bucatini Aglio e Olio served with Crispy Sardines, Oven-Baked Sea Bass with Tomato Sauce and Mozzarella, and Grilled Beef Tenderloin served with Scallops, Herb Potatoes, and Pepper Butter Sauce.
